We didn't quite get enough Mexican food yesterday on Cinco de Mayo so I decided to make fajitas tonight :-) In part to finish off the guacamole I made yesterday. Turned out pretty good ... Hope you enjoy!
Prawn Fajitas
Ingredients
1 pound prawns, peeled and deveined
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon lime juice
¼ teaspoon cayenne pepper
1 teaspoon chili powder
1 tablespoon olive oil
1 cup sliced bell pepper (I used red & orange)
1 cup sliced onion
1 cup frozen corn
Tortillas
Garnish: cilantro, cheese, sour cream, salsa, black beans, and guacamole
Directions
- Combine the Worcestershire, soy sauce, lime juice, cayenne pepper and chili powder in a medium bowl. Add the shrimp and marinate 30 minutes or so.
- Heat olive oil in a large skillet over medium heat. Sauté the peppers, onion, and corn for 10 minutes or until the vegetables are tender. Cover to keep warm and set aside.
- In a separate skillet heat olive oil over medium heat. Add the shrimp and cook for 3 to 5 minutes, until the shrimp are pink. Combine the shrimp and the vegetables.
- Set out the spread and enjoy the feast :-)
